The position is located at the Oscar G. Johnson VA Medical Center, Iron Mountain, MI - a level 3 Complexity VHA Facility and is organizationally aligned under the Nutrition and Food Service. The purpose of this position is to performs a full range of simple cooking tasks including duties pertaining to food preparation, sanitation, and food service. Major Duties: Food Production: - Performs a full range of simple cooking tasks by preparing and cooking/heating items that require little or no processing, using several different methods in support of Cook/Serve, Cook/Chill, and Ready-To-Serve/convenience foods. - Prepares food by chopping, grinding, peeling, paring, cutting, slicing, dicing, and pureeing. - Weighs, measures and assembles ingredients for regular and modified menu items. - Mixes ingredients according to precisely written recipes that produce quality products, minimize preparation time and avoid food material waste. - Portions foods for distribution and meal service. - Labels food items identifying product, date of production, and use by date. Covers and stores leftovers according to established guidelines. Safety & Sanitation: - Cooks food to proper temperatures and maintains the proper temperature for all foods during holding to assure quality control and food safety. - Measures and documents food temperatures of prepared food items. - Assists with rotation of stock, checking dates on food products, and properly labeling and dating all food items. Discards postdated products appropriately. - Cleans work areas practicing a "clean as you go" concept, including refrigeration/freezer units, work tables/carts, cooking and food preparation equipment, floors, walls, shelving, etc. - Safely operates a variety of kitchen equipment which utilizes gas, electricity, steam, and/or microwave heat sources. - Refers concerns/question to supervisor, including equipment in need of repair, any safety hazards, and suggestions for improvement. General Food Service: - Manages all functions pertaining to diet office communication center when assigned to that area. - Follows task sheets and/or production schedules and menus created for assigned area. - Set up and work all stations on tray line. - Utilizes the computer to print food production worksheets, daily nourishments and food preferences. - Does simple arithmetic, such as multiplying/dividing ingredients in a recipe or determining how many servings in a container; understand fractions and decimals and uses a calculator and computer in assigned tasks. - Provide training or cross-training to other employees, as directed, or as needed assist others.
